YaYa - Greek for Grandmother! YES that would be me! Now that the word is out, I am thrilled to announce that at the end of September, I will be YaYa once again! My baby is having a baby! We are so excited and feeling so blessed!I have been knowing for a few weeks but was sworn to secrecy until she saw the Dr and had an ultrasound! Now that its official...its ON! I can tell you that being a YaYa has brought me so much joy and love...there is nothing like it. I mean being a parent is wonderful, but  being a grandparent...wow...just wow! Y'all know what I mean! I have already shopped but have not bought anything...yet! After today I think that will change...look out Amazon!

King Cake Bites

  • 1 (8oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp lemon juice
  • 2 tsp cinnamon
  • 2 cans (8 oz each) refrigerated crescent dinner rolls

  • Glaze
  • 1 cup powdered sugar
  • 2 Tbsp milk

  • yellow, green, purple sugar

Preheat oven to 350 degrees.

Beat cream cheese, 1 cup powdered sugar and lemon juice with mixer until well blended.

Separate dough into 8 rectangles; seal seams. Sprinkle each rectangle with approximately 1/4 teaspoon of cinnamon.

Spread cream cheese mixture down middle of each rectangle. Fold each rectangle lengthwise into thirds to enclose filling (bring long edges up to cover cream cheese); cut each into 4 squares. Place, seam-sides down, on baking sheet.

Bake 13 to 15 min. or until golden brown. Cool slightly.

Mix together remaining 1 cup powdered sugar and milk. Spread on top of King Cake Bites and sprinkle with colored sugars.

THANKFUL and Caramel Praline topped Cheesecake!

Thankful...such a powerful word.
 I have so much to be thankful for...the list would be very long, but for today I am. thankful for a great Dr's visit yesterday! I had a Nuclear Stress Test with my cardiologist. To say I was worried and "stressed" about it is putting it mildly. The test was a breeze, no pain just a little bit of feeling flushed and a headache afterwards. The results were really good, great blood flow to all parts of my ♥ and no blockages noted! Isn't that great??? He told me to keep doing what I have been doing and I should be good for many years to come! The tech's were so patient and sweet, that made the experience so much easier. Thank you Pam and Todd, y'all were amazing!
 But most of all thank you God for watching over me!
This past weekend we celebrated Christmas/Mardi Gras with my family since so many of us
were dealing with health issues at Christmas time.
We had such a nice evening and it was so good to be with everyone.
Family is so important...always remember that!
The kids had so much fun together.

This recipe is so sinful and so good!
You can even sprinkle some purple green and yellow sugar on
top and serve it at your Mardi Gras party!
Caramel Praline-topped Cheesecake
•1-1/2 cups crushed vanilla wafers (about 45 wafers)
•1/4 cup sugar
•1/4 cup butter, melted
•16 whole vanilla wafers

•3 packages (8 ounces each) cream cheese, softened
•1 cup sugar
•1/2 cup sour cream
•1 teaspoon vanilla extract
•3 large eggs, lightly beaten

•25 caramels
•2 tablespoons milk
•1/2 cup chopped pecans, toasted

•1. Preheat oven to 325°. In a small bowl, mix wafer crumbs and sugar; stir in butter. Press onto bottom of a greased 9-in. spring form pan. Arrange whole wafers, rounded sides out, along sides of pan, pressing lightly into crumbs. 

•2.  In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream and vanilla. Add eggs; beat on low speed just until combined. Pour over crust. Place pan on a baking sheet. 

•3.  Bake 55-60 minutes or until center is almost set. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled. 

•4. In a microwave, melt caramels with milk; stir until smooth. Remove rim from pan. Drizzle cheesecake with caramel mixture; sprinkle with pecans.
Yield: 12 servings.

Super Bowl and Mardi Gras Bread Pudding

If you know what this symbolizes...you might be from Louisiana~
It is definitely Mardi Gras and crayfish season!
They kind of go hand in hand around here!
When I was younger, I loved Mardi Gras time, as I got older, not so much!
Now that I have grandchildren, I love it through their eyes!
And as far as crayfish...loved them my entire life...always will.
Throw me something mister...beads or crayfish...either is good!!!
Now THIS is a king cake...fit for a king!

Did you all enjoy the Super Bowl yesterday?
I certainly did. Like most folks from South Louisiana, I am NOT a fan of
the Falcons. Sorry (not sorry) they lost. No one in history has lost a Super Bowl
with such a huge lead...except the dirty birds. Oh well, better luck next time.
And Lady GaGa...awesome half time show. I was very surprised and impressed. Of course
the news media will make it to be something it wasn't. No surprise there.
I thought she did an amazing job and is super talented..

If you like king cake and bread pudding...here's the recipe for you!

king cake bread pudding
Prep Time:15 min Total Time:1 hr 25 min 
For the Bread Pudding
  • 16 pieces of bread, cubed (toasted)
  • 6 eggs
  • 1/2 Tbsp vanilla
  • 1 1/2 cups sugar
  • 4 cups milk
For Cinnamon Mixture
  • 1/2 cup butter
  • 1 cup brown sugar
  • 2 Tbsp cinnamon
For Icing
  • 2 Tbsp butter
  • 4 oz. cream cheese
  • 1 cup powdered sugar
  • 2-4 Tbsp milk
  • colored sugars/sprinkles
For Bread Pudding
  • 1 Whisk eggs, sugar, and vanilla until smooth. Add in milk.
  • 2 Add cubed bread and combine until bread coated.
For Cinnamon Mixture
  • 1 Melt butter and mix with brown sugar and cinnamon.
  • 2 Spread half of bread into 9x13 pan and spread cinnamon mixture over the bread. Add second layer of bread.
  • 3 Bake for 60-70 minutes at 350 degrees.
For Icing
  • 1 Combine butter, cream cheese, powdered sugar, and milk until smooth.
  • 2 Top bread pudding with icing and colored sugars/sprinkles.
