BIRTHDAY CELEBRATION & KING CAKE OREO TRUFFLES !



There is something I have learned...even when you are not working, the weekends just seem to fly by! I guess since I am alone all week, I look forward to the weekends and having everyone home! This past weekend was extra special because it started off on Friday with a surprise visit with my Aunt Brenda in Baton Rouge! It was the perfect birthday surprise and just seeing the joy in her face made it even more special!

We had such a wonderful day...spending it with cousin's I have not seen in years!

here is a recipe for y'all.....

Mardi Gras King Cake Oreo Truffles (No Bake) 


A food blog featuring delicious, home cooked family recipes anyone can make.:

Ingredients:
  • 1 package Golden Oreos (14 oz or 16 oz, either is fine)
  • 8 oz. container brown sugar & cinnamon cream cheese 
  • (Alternatively you can use 8 oz. plain cream cheese with 1 Tablespoon cinnamon, or more cinnamon to taste)
  • 12 ounces white almond bark (6 blocks)
Directions:
  1. Blitz the oreos in a food processor until they are fine crumbs. Add the cream cheese and process until it comes together and forms a large ball. Transfer to a bowl. Scoop with a medium cookie scoop (1.5 Tablespoons) into balls and set on a plate. Once finished, transfer to the fridge to chill. The reason to chill them is so that they don't release a bunch of crumbs into the melted almond bark later.
  2. After the cookie balls have chilled, melt the almond bark according to package directions. Stir well so it is nice and smooth. Dip the cookie balls into the melted almond bark and coat thoroughly, tapping your fork to get excess off. Place onto a piece of parchment paper, add sprinkles to top and allow the coating to set up.  I did about 3 at a time then sprinkled. By the time you finish all the balls, the coating should be pretty much set up. Transfer to a covered container and keep in the fridge until ready to eat.

Monday and Easy King cake!



It's funny how Monday takes on a whole new meaning when you are not working. There are mixed emotions for me...I used to dread Monday's because I knew how busy we would be at the office. Now I dread Mondays because its the beginning of a long week for me...the days are so long being here alone. Trust me I enjoy my alone time but one can only be alone for so long before they are talking to themselves...and answering! I miss my work people so much and I miss the rewards of the work I used to do. Who knows what the future holds...we shall see!

Mardi Gras will be here before we know it! I have a super simple recipe to share with you for a yummy King Cake. If you like simple, then this is for you! Let me know if you make it and enjoy it...or bring me a piece <wink>

CARNIVAL COFFEE CAKE

Carnival Coffee Cake 


Ingredients
  • 2 (8-ounce) cans crescent roll dough
  • 1 (8-ounce) package cream cheese
  • 2/3 cup plus 1/4 cup confectioners’ sugar, divided
  • ½ teaspoon vanilla extract
  • 2 medium Granny Smith apples, peeled, cored, and thinly sliced
  • 1 tablespoon cinnamon sugar
  • ½ cup chopped pecans
  • 2 tablespoons whole milk
  • Colored Sugars, recipe follows
Instructions
  • 1
    Preheat oven to 350°.
  • 2
    Unroll and divide crescent rolls into triangles. Place pieces around the edge of an 11-inch round baking dish, overlapping pieces with the points of the dough hanging over the dish. Press seams of all pieces together to seal.

    In a large bowl, combine cream cheese, 2/3 cup confectioners’ sugar, and vanilla. Spread onto dough. Place apple slices on cream cheese mixture. Add cinnamon sugar and chopped pecans. Fold the points of dough over the filling, and tuck under the bottom of the dough, to create a ring shape. Bake until golden brown, 20 to 25 minutes. Set aside and let cool to room temperature.

    In a small bowl, combine remaining 1/4 cup confectioners’ sugar and milk. Spoon glaze over top of cake, and sprinkle with Colored Sugars.

January 20,2017 - Inauguration Day - New Beginnings



Congratulations to our 45th President of the United States, Donald J. Trump!  He gives us hope for our country, something we have not had in a long time. I pray that he, along with all of our politicians can work together for a better America, that is what it's all about right? God bless America!


You may have noticed that I started a new blog with a new name and soon a new look. It seems while I was away the last few months, my blog was hacked and I lost all of my posts from the last 4 years. That makes me sad and mad, but just like I have been given a chance at a new life, so will my blog. I hope you continue to enjoy my postings and I can make your day just a little bit brighter. I will keep sharing things about my everyday life and some good recipes here and there.
